| Ingredients |
| 300g/10oz
spaghetti |
| 175g/6oz
frozen peas |
| 25g/1oz
butter |
| 1 large
leek |
| 4
eggs |
| 140g/5oz
thick slice of smoked ham, cut into cubes |
| 85g/3oz
Dew-Lay Cheddar or Lancashire cheese, grated |

Method |

Cook
the pasta. Bring the large pan of salted water to the boil. Add the
spaghetti and cook for 10 - 12 minutes, adding the peas for the last
three minutes of the cooking time. |

Fry
the leek. Meanwhile, heat the butter in a small pan. Wash and slice
the leek. Add to the pan and cook over a medium heat for three minutes
until softened. |

Finish
the dish. Beat the eggs in a bowl and season with salt and pepper.
Drain the pasta and immediately return to the pan. Tip in the leeks,
eggs, ham and half the cheese. Stir well. Adjust the seasoning and
serve sprinkled with the remaining cheese. |
