Creamy white in colour with blue vein radiating from the rind. It is best served at room temperature.
Garstang Blue Lancashire has a flavour strength of 3 out of 5. It is ideal for those who find most blue cheese a little too strong, as it has a softer and milder tone with a smooth and creamy texture.
It is superb for crumbling into salads, pastas and soups. It also works well with sauces and dressings with a honey, white wine, cream or butter base.
As an accompaniment try a good Merlot or Pinot Noir.
Such has been the success of Garstang Blue it needs its own home! It's not moved far though. Set alongside the existing dairy, the purpose built facility is more than 4000 sqft and plays host to the spiking, maturing and the cutting and wrapping of Garstang Blue.
Garstang Blue needs a lot of nurturing and attention so we need to give it as much support as we can in order for it to develop fully. It also needs to be stored in a special climate, so this facility really allows us to give it the care it demands.
